This wine is huge, expansive and profound. There are wood-smoke and tobacco fragrances alongside blackberry and dark cherry flavors. The body is full and thick however there are delicate tannins in the surface.
Until the 1980s the wines of Languedoc-Roussillon were mostly rustic, roasted, and dirt-cheap--of little interest to export markets. Smells like strawberries, raspberries and white flowers.

This Spumante is sweet, with outstanding fruit flavors, and a long, smooth finish. It pairs best with spicy food. This champagne is a straw color and a forward fruit flavor and mild floral character. The aromas are balanced with a bouquet of toasty yeast notes and floral nuances.
This wine, though possessing the characteristic suaveness of the site, does possess a trace more density than years past–likely due to the additional thinning passes we made. It was also an exceptional year for Mataro in a generally very strong year at the site, and the variety makes up over 30% of the blend.
