The structure is dense, with rich but harmonious tannins, of great thickness; the fruit is supported by a fresh acidity, and the persistent aftertaste is of jam. It is enhanced with roasted red meat, suckling pig, game and greedy game, jugged pheasant and venison stew, spicy cheeses and Umbrian palombacci.
