The frozen Gewurztraminer grapes were harvested in late December when temperatures fell between -10ºC and -13ºC. After setting the juice in stainless steel tanks, cool fermentation was completed. The wine was then placed outside to complete a natural cold stabilization.
The red berry characteristics of the vinifera grape Cabernet Franc translate as an Icewine into strawberry like aromas and flavors. This Icewine is completely different from the white Icewines.

From a mix of younger and older vines of 5-40 year old vines planted various plots closer to the river on alluvial soil and sand. Emmerich Knoll farms 16 hectares of vines in some of the best sites, the Loibner Gruner Veltliner comes from two vineyards on the lower flatter slopes of the steeply terraced Loibenberg hillside close to the Danube.
