All fruit is hand-harvested, sorted and 100% destemmed. Vinification takes place in thermo-regulated cement cuves over four to five weeks. The 2006 Cab. Sauv. is dark ruby in color with aromas of black cherries, cola, cedar and spice, quite layered and complex. Produced from Cabernet Franc that is grown in siliceous-limestone soils. The grapes are de-stemmed and then fermented in stainless steel vats.
