Dark, brooding color with purple edges. A unique viscosity to this wine in the glass and immediate savory spices drifting outward. Dark red berries, Hawaiian starfruit, root beer cask, and sweet bark emerge as you lean in.
“Madly sited”, perched high between two mountain ranges on a pass once a meeting point for cattle drovers on their way to market. The name Dalwhinnie translates from Gaelic as “Plain of Meetings”. Surviving periods of closure, the distillery has produced its distinctive single malt since 1947, only being completely modernized in 1996. Dalwhinnie has the coldest annual mean temperature of any inhabited place in Scotland and is so cold in winter, that the water in the outside worm tubs can freeze. That very coldness lends an intensity to the spirit that is even more marked in winter.
2017 was a very challenging year, as most of their vineyards in San Vicente de la Sonsierra in Rioja were affected by frost, unlike others in nearby Laguardia. Not only was it frost, but they also had hail later on in the season. Quantities suffered—they told me they lost 70% of the crop in Rioja that year—but they were happy about the quality of the 2017 Macán, being very careful with the fermentation and separating the press wine by quality.
To create this unparalleled expression, we worked with our friend and Jim Beam Master Distiller, Fred Noe, aging our tequila in the legendary Booker’s 30th anniversary barrels for over three years. The result is a complex spirit layered with sweetness, oak, and cooked agave. It’s a tequila deserving of the legacies that brought it to life.
Our Signature 34 Edition Vodka has it all – layers of flavor, complexity and smoothness. We start by slowly distilling the heart 34 times, with maximum copper contact, to bring out the distinct character of the organic winter wheat and malted barley. We then finish by adding a touch of soft natural spring water to open the flavors and create the characteristic smoothness Purity Vodka is known for. The result is unlike any other vodka.
