Next came transit over ocean waters, a practice now both common and efficient for fruits and vegetables. The chilled grapes arrived at Caymus, as if just harvested.

Over the past decade Herzog searched tirelessly for the perfect opportunity to share the wine of this renowned region with the Kosher Wine world. The grapes were harvested at 26° brix and transported to the cellars at 45°F in bins not fully loaded to keep the clusters intact, de-stemmed into a small tank, and fermented for 13 days.

This wine is made using the traditional method of appassimento, where the grapes are left to dry for several months to concentrate the flavors and aromas. The blend typically consists of Corvina, Rondinella, and Molinara grapes, with small additions of other local varieties.
