Thomas S. Moore Cabernet Sauvignon Cask Finished Bourbon is one of three releases in the new "ultra-premium" brand from Barton 1792 Distillery. Moore founded the distillery in 1889 in Bardstown, Kentucky now known as Barton 1792 but it closed in 1920 due to Prohibition.
This Bordeaux wine comes from the Côtes de Blaye appellation which is known for providing some of the best value wines. It offers a medium body with intriguing and generous notes of black currants, blueberries, tobacco and mild spices. It's perfect balance and soft tannins make it a great accompaniment to any meal.
A very fresh and decidedly peppery nose features pretty notes of red berries and an elegant floral nuance. There is fine intensity and volume to the well-detailed middle weight flavors that deliver very good length on the saline-inflected finish. Good stuff that could be enjoyed young or aged for a few years to good effect.

Mature hand harvested agave are slow cooked in stone ovens, and after long fermentations they are double pot distilled and gently brought down to proof with every care taken to preserve the rich purity of agave flavors and the terroir. The 2020 Great Sage is crafted from small lots of Cabernet Sauvignon from mountain and hillside vineyards in Northern Napa Valley. Whole berry fermented, cave-aged in 100% French Oak for two years, this wine is bottled unfiltered to retain its natural character.
